Separate Raw and Cooked Foods: Keep raw meat, poultry, seafood, and eggs separate from other foods in your shopping cart, bags, and refrigerator to prevent cross-contamination.

2. Handling and Preparation

Wash Hands: Wash your hands thoroughly with soap and water before and after handling food, especially raw meat, poultry, seafood, and eggs.

Clean Surfaces: Sanitize cutting boards, utensils, and countertops after preparing each food item.

Use Separate Equipment: Use separate cutting boards and knives for raw meat and vegetables to prevent cross-contamination.

Thaw Safely: Thaw frozen food in the refrigerator, cold water, or microwave, not on the countertop.

Cook Thoroughly: Cook food to the appropriate internal temperature to kill harmful bacteria. Use a food thermometer to check:

Poultry: 165°F (74°C)

Ground meat: 160°F (71°C)

Steaks, roasts, and fish: 145°F (63°C)

Leftovers and casseroles: 165°F (74°C)

Avoid Partially Cooking: Do not partially cook food and finish cooking it later. This can encourage bacterial growth.

Reheat Properly: Reheat leftovers to at least 165°F (74°C).

4. Serving

Keep Food at Safe Temperatures:

Hot foods should be kept at 140°F (60°C) or warmer.

Cold foods should be kept at 40°F (4°C) or cooler.

Avoid the Danger Zone: Bacteria grow rapidly between 40°F (4°C) and 140°F (60°C). Do not leave perishable food out for more than 2 hours (1 hour if the temperature is above 90°F/32°C).

5. Leftovers

Cool Quickly: Refrigerate leftovers within 2 hours of cooking (1 hour if the temperature is above 90°F/32°C).

Store Properly: Use shallow containers for faster cooling. Label and date leftovers, and consume them within 3-4 days.

Reheat Safely: Ensure leftovers are reheated to at least 165°F (74°C) before consuming.
